'A good frankie doesn’t have to be loaded with calories, it can be loaded with nutrients and be delicious too. Here is how! VEG FRANKIE Ingredients ¼ cup red kidney beans, soaked overnight and drained ½ medium potato, boiled and peeled 2-3 tablespoons grated broccoli 4 readymade multigrain rotis 2 tablespoons chopped fresh coriander leaves Salt to taste 1 teaspoon dried mango powder A pinch turmeric powder ½ teaspoon cumin powder 1 teaspoon chaat masala 1½ teaspoons red chilli powder 2 tablespoons fresh brown breadcrumbs 2 teaspoons oil ¼ medium cabbage, shredded 1 small carrot, grated 2 teaspoons chilli vinegar 1 small onion, sliced Schezwan sauce for spreading Method 1. Take red kidney beans in a bowl. Add potato and mash well. 2. Add broccoli, 1 tablespoon coriander leaves, salt, dried mango powder, turmeric powder, cumin powder, ½ teaspoon chaat masala and 1 teaspoon chilli powder and mix. Add breadcrumbs and mix well. 3. Divide the mixture into equal portions and shape into croquettes. 4. Heat oil in a non-stick pan. Place the croquettes and cook from both sides till golden. 5. To prepare salad, take shredded cabbage in another bowl. Add remaining coriander leaves, carrot, chilli vinegar, onion, salt, remaining chaat masala, remaining chilli powder and mix well. 6. Warm the rotis in the same non-stick pan and transfer on the worktop. 7. Spread some schezwan sauce on each roti, place 2 croquettes in the center, put some salad mixture on top and wrap to make Frankies. 8. Wrap each Frankie with aluminium foil and serve immediately.
